Ingredients
  • 3 tbsp canola (or any kind) oil
  • 1 large onion, sliced
  • 3 cloves of garlic, chopped
  • 1 lb sirloin or skirt steak, sliced thinly across the grain
  • 1 tbsp oyster sauce
  • 1 tsp soy sauce
  • 1/2 tsp ground pepper
  • 1 tsp brown sugar
  • 2 tbsp salted black (tausi) beans, rinsed and drained
  • 1 cup water (add more as needed)
  • salt to taste
  • 2 large bitter (ampalaya) melon, sliced
  • 1/2 tsp cornstarch (diluted in 2 tbsp water), optional
  • 1/2 tsp sesame oil



Instructions
  1. In a wide pan, heat oil over medium heat. Saute onion and garlic until fragrant for about a minute. Add slices of beef and cook until lightly browned for about 3-5 minutes. 
  2. Add oyster sauce, soy sauce, ground pepper, sugar and salted black beans. Stir and cook for few minutes. 
  3. Pour-in water and stir to combine. Cover pan and bring into a quick boil then reduce heat to low. Simmer until meat is tender and sauce is reduced. Add more water as needed. 
  4. Season with salt to taste and add sliced ampalaya. Let it simmer for about 5 minutes without stirring then stir gently to combine. Cover and cook until ampalaya is tender for about 3-5 minutes. 
  5. Pour-in cornstarch diluted in water and stir to combine. Cook for few minutes. Drizzle with sesame oil and gently stir. Transfer in a serving dish and serve while hot with steamed rice. Enjoy!
