The curry dish that we know and love is a delicious combination of a mild yellow curry spice mix added to a chicken and simmered with gata or coconut milk. This heartwarming dish is delicious, comforting, and extra creamy, thanks to coconut milk. 

Gata is extremely perishable just like other coconut products. It needs to be used within the day that you get it from the palengke. That’s why packaged coconut milk and coconut cream are so convenient! These are shelf-stable ingredients that make dishes that use coconut milk such as curry an easy dish to make at a moment’s notice. You just have to have it in stock in your kitchen. 

However, even stocks in the supermarket can easily run out. If you’re faced with the prospect of curry without coconut milk, have faith. You can make curry without gata.

Did you know that not all curry recipes use coconut milk as an ingredient? In fact, some use yogurt instead for its delicious combination of tang and creaminess.
