Sydney based specialty coffee roasters Toby’s Estate have opened the doors to their new flagship venue in Chippendale. Breaking down the somewhat linear experience of a traditional cafe where barista is on one side and a customer on the other, Toby’s Estate Chippendale has been designed to give guests a peek behind the curtain, freedom to wander around, get close to the baristas as they brew coffees and feel a sense of connectivity and excitement as the team share their passion for the world of coffee.

Specialty coffee is an incredible and intricate world filled with unique processes, innovations and exciting farmer stories, but at times can be overwhelming and intimidating. “The whole space is geared towards interactions, you can sit at the bar and watch coffee be made, or you can take a table and talk to your waiter about the options,” said Jack Stapelfeldt, Flagship Manager.

“Whether you’re new to coffee or advanced in your knowledge, our Chippendale team will meet you at your level and help guide you one step further in your coffee journey,” he said.

The 108sqm venue was designed by Architects Russell & George, known for their previous work in designing over 17 different Aesop stores and numerous other innovative projects. They have delivered an impressive result with the Toby’s Estate Chippendale venue.

So what can guests expect? Those wanting to get a first-hand look can sit around the main island brew bar with other like-minded enthusiasts, get very close to our team, ask questions, and get involved. Those keen for more covert interaction can watch from afar, utilising the overhead mirrors to see ‘behind the curtain’.

Large sliding glass doors look through to Toby Estate’s state of the art roastery, where the team develop and roast over ten coffee offerings at any given time.

The coffee menu will offer Toby Estate’s monthly rotation of unique single origins, Flavour Savour blends and an extensive reserve and cellar menu boasting a high scoring array of unique coffees ranging from those used to win the Australian Brewers cup championship and others exploring innovative & unique processing methods.

It’s not just all coffee, though, guests can relish in a bite to eat including Brickfields toast with Drunken Sailor condiments, coconut paleo granola and Tuga pastries. Those looking for something more hearty can tuck into Toby Estate’s ever-changing toastie and baguette menu, including a wagyu pastrami three-cheese toastie or a hot smoked salmon baguette with pickled zucchini.

Toby’s Estate Chippendale will also act as the home base for their local Brew Runner service, a convenient home delivery service for several suburbs in the Inner West. This service ensures that Toby’s specialty coffee is delivered just in time for its optimum drinking window, just a few days after roasting – when the coffee flavours are at their peak.
