Bibingka Meets Burnt Basque Cheesecake On This Cool Dessert

We’re sure by now you’ve heard of burnt Basque cheesecake, which is one of those desserts everyone in the Metro has been buzzing about this past quarantine. It’s available in cool variations, from an ube-flavored cake to one topped with mangoes. We found another version you might love but this one marries the cake with a Filipino fave: Costumbre‘s Bibingbasque is burnt Basque cheesecake meets bibingka!

Bibingka is a type of local rice cake that is cooked over an open fire while wrapped in banana leaves in a clay pot. The charcoals are placed both on top and the bottom of the clay pot so it actually gets “baked”. This cooking method gives the local pastry its signature crispy edges, which add a warm, toasty flavor to the fluffy cake.

Now imagine that flavor in the light, airy base of a burnt Basque cheesecake. We’re already drooling! You can get a six-inch serving of this cake for just P680. They also give you the option to top the cake with mangoes or calamansi jam, and you can get those for P750 each.
