Nilagang Baboy with Langka Ilonggo Style dish is a fusion of the Tinola and Sinigang. It has Tanglad and Ginger from Tinola and Batuan as the souring agent, just like Sinigang.

Ingredients

  • 1 kilo Pork Chopped
  • 1/4 kilo Chopped Jackfruit
  • 8 pcs small Batuan fruit or Batuan paste
  • 1 bundle tanglad
  • 5 to 6 cups Water
  • 7 cloves Garlic minced
  • 2 pcs small Onion chopped
  • 1 thumb size ginger
  • 1 tbsp Atsuete oil
  • 2 pcs pork cubes
  • 2 tbsp Canola oil for frying
  • 6 stems scallions
  • 6 pcs chilis
  • salt according to taste

Instructions

~ How to Cook ~

  • Let’s start by making Atsuete Oil.
  • Pour 1/2 cup Canola Oil
  • Add 1/4 cup atsuete seeds
  • Heat Oil until it starts to bubble
  • Let the atsuete infuse in oil & render its color
  • simmer for 2-3 mins., fire off & let it cool down
  • strain atsuete oil & discard the seeds
  • Transfer Atsuete Oil in a bottle or
  • sealed container. Store at room temp.

Let’s start cooking Linaga na Baboy

  • Heat canola oil in a pan
  • saute minced garlic, chopped onions and sliced ginger
  • Saute until ginger is fragrant.
  • add pork then add 1/2 tbsp of salt and saute
  • Sear the Pork until light brown
  • pour 5 cups of water
  • Cover & let it bring to a rapid boiling.
  • when it starts to boil add langka
  • Add tanglad and Batuan
  • Cover again & let it boil for 5 mins.
  • add 2 pork cubes
  • Simmer for 20 minutes or until the langka is cooked
  • Add atsuete oil and mix
  • add scallions & chilis, simmer for another 3 min.
