How to cook Tokneneng

Tokneneng Recipe are hard-boiled chicken eggs dipped in orange-colored batter and deep-fried in oil. Tokneneng is a popular, inexpensive, easy to prepare, delicious and highly addictive Filipino street food found throughout the Philippines. Best paired with Manong sauce or spiced vinegar dip with chili.

Tokneneng is traditionally made with chicken or duck eggs, while Kwek kwek is made with quail eggs or “Itlog ng Pugo.” Both are sold together with fish balls, kikiam, and squid balls.

Tokneneng Recipe are hard-boiled eggs coated with bright orange waffle-like batter, best paired with Manong sauce or spiced vinegar dip.

Ingredients

  • 10 pcs. hard boiled Eggs
  • 1/3 cup All-Purpose Flour

BATTER:

  • 1 cup All-Purpose Flour
  • 1/2 cup Cornstarch
  • 2 tsp. Baking Powder
  • 1 tsp. Salt or Magic Sarap
  • 1/2 tsp. Black Pepper
  • 2 tsp. Annatto Powder atsuete
  • 2/3 cup Water add more if batter is too thick
  • 2 drops Orange Food Color optional

SUKANG SAWSAWAN:

  • 1 small Red Onions minced
  • 3 inches Cucumber seeded & diced
  • 2-3 pcs. Red and Green Chillies chopped
  • 1 cup White Vinegar “Datu Puti”
  • 1/2 cup Water
  • 3-4 tbsp. Sugar
  • 1 tsp. Salt
  • 1 tsp. Freshly Cracked Black Pepper

Instructions

  • Boil 1 dozen eggs for 10 minutes
  • Drain, let it cool completely, cracked & peel off egg shells
  • Coat eggs with flour
  • Combine flour, cornstarch and baking powder
  • Add seasoning annatto powder, magic sarap & black pepper then mix.
  • Add water gradually & mix, make sure the consistency of batter is not too thick or runny

~ Time to Fry ~

  • Heat oil in a pan
  • Coat eggs with annatto batter using bamboo skewers or spoon
  • Fry each Tokneneng for 3-4 mins.

~ Let’s make of our Sukang Sawsawan ~

  • Mince small red onion
  • Peel & mince cucumber
  • Slice red & green chillies
  • Add white vinegar, water and sugar
  • Add salt and black pepper then stir until well combine

~ To Serve ~

  • Transfer Tokneneng ina plastic cup and cut
  • Top with sawsawan and serve with a skewer
