Whenever I don’t know what to make for breakfast, lunch, or even a snack, my fallback is always avocado toast. I’ll usually keep it simple—olive oil, salt, pepper, and maybe a squeeze of lemon or splash of balsamic for bite—but every now and then, I like to break out of my avo toast routine and mix things up a bit. Think: crunchy-crisp garnishes (like shallots, thinly sliced red onion, and nori), herbs (from parsley to mint), cheeses (feta is a fave), proteins (canned tuna or chicken work great), and different types of drizzles and dressings (hello, tahini).
